Gluten-Free Orange Coconut Muffins!

I made this recipe from a vegan cookbook and I absolutely loved it!  I have modified the recipe and it makes for a perfect snack whenever you’re on the go!  I hope you try it as I am sure you will love it as well! Enjoy!

The recipe calls for:
1 cup brown rice flour
2/3 cup almond flour
1/2 cup arrowroot flour
1/3 cup cane sugar
2 tsp baking powder
1/2 tsp Pink Himalayan salt
1/3 cup maple syrup
1/2 cup orange juice
Orange zest from 1 fresh orange
1 1/2 tsp vanilla extract
1/2 cup chopped almonds
1/4 cup unsweetened shredded coconut


1. Preheat the oven to 375 degrees F.  Line muffin tin with paper liners or grease with coconut oil.
2. Mix together the brown rice flour, almond flour, arrowroot, sugar, baking powder, and salt.  Add in the maple syrup, orange juice, orange zest, and vanilla.  Stir in the almonds and coconut.
3. Place mixture in muffin tin.  Bake about 15 minutes, or until toothpick comes out clean.  Cool the muffins 15 minutes before serving.
