Applesauce Cake

SERVES 12 PEOPLE

  • 2 Flax Eggs
  • 1 ½ cup Applesauce
  • 1 cup Brown Sugar
  • ½ cup Grapeseed Oil or coconut oil
  • 1 tsp Vanilla
  • 2 ½ cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tbsp Cinnamon
  • 1 tsp Nutmeg
  • ½ tsp cloves or ginger
  • ½ tsp Salt

Directions:
1.  Preheat oven to 350 degrees F.  Coat 8-inch baking tray with coconut oil
2. Whisk together the flour, salt, baking soda, and cinnamon.
3.  In another bowl, whisk together the oil and sugar then slowly whisk in the applesauce.  Slowly whisk in the dry ingredients into the wet ingredients until smooth.
4.  Pour the batter into the baking tray and bake for 35-40 mins or until toothpick comes out clean.  Cool, cut, and serve the cake.
